Driving my truck (for work - can't use motorcycle) I've been doing 55 lately from Martinez to Napa and from Martinez to Antioch and it seems like I am being a traffic hazard with even big rigs passing me.

When I bought my KLR650 I came home from Roseville cyclecenter down 5-160-4 and kept it under the revs for proper break-in which kept the speed at 55.
There were a couple of times that I thought for sure I was gonna get run over.

The main reason that I do it now is because of gas prices. I can get over 20mpg in my truck going 55 as opposed to 17mpg at 75.
I know that trucks (not pick-ups like mine) are supposed to travel at 55.

Could this be construed as being a traffic hazard and get me a ticket or should I just shut up, deal with it and drive with the flow?

If you're in the right lane, I have no clue what they could cite you for. However, due to safety I would do the speed limit anyway.

Just put a trailer on, trucks with trailers two right lanes 55 max. =)
