i think i prefer kahlua pig more than lechon nowadays, but i do need to still have my whitey GF try real lechon one of these days, the lechon kawali stuff doesnt count.

I love the Lechons that are cooked when they're still pretty young and small.

When I was about 8 years old, we visited an elderly relative in Stockton. He had a small farm and slaughtered one of his pigs for us. Was kinda neat watching the process. I esp. remember that the pig was shaved and that boiled water was poured over its body as its blood gushed into a big stainless steel bowl.
Odd thing was for years afterwards I could eat cooked pork but couldn't stomach diniguan.
And my folks are from the Dagupan City too. :)
