I made Adobo yesterday...turned out really good according to my Filipino taste tester. I could have marinated the chicken longer, but overall i'm liking the recipe.

The cook on the destroyer I was on when we went to the North Pole was Filipino. Our menu was:

Night 1: Chicken Adobo
Night 2: Pork Adobo
Night 3: Chicken and Pork Adobo :wtf

We were going through a ton of rice a month....and I lost 25lbs!

Our previous cook was an award winning Italian chef who was fattening us up on some really nice chow...then this guy comes onboard. Even the Captain got tired of adobo every night! Needless to say he only lasted a few months! :laughing
