Non-BBQ Food pRon

So my experiment with making my own frozen instant fries is a success. Boil Yukon Gold in vinegar water for 15-20 min then dry. Then deep fry in oil 4 minutes @ 300-325 just before they start to color. Freeze, and toss in an air fryer at 380 for 10 min to finish. Fucking delicious. I did like 10 potatoes should have done like 20.
 
Philly cheese on my new griddle. Used some thin sliced beef from the Japanese market...got the wrong one, texture is perfect but flavor is lacking. Still satisfying.

I'll bet it tasted killer, as well!

One thing that I miss from the East Coast up around Boston is a good grinder. The philly cheese steaks come the closest, but still not the same. Anybody else had grinders from New England in the past?
 
It was a very satisfying sandwich but the meat wasn't as tasty as a normal philly so I think cheapening out on that part wasn't worth it. The cheese and bread tasted fine. I will try a different pre-sliced cut next time.

Truth is making it yourself in this case doesn't save a ton of money. I still enjoy the Cheesesteak shop on Divisadero.

In my home province, "Subs" are very popular and a variation on a Philly cheese (much less cheese), and they also typically have lettuce and tomato slices with oregano on then, and pepperoni is a popular add-on which I love, and the Cheesesteak shop offers that!

Years ago, we took a road trip up to Montreal from NH, when we got there, we got a pepperoni pizza, it had a whole sheet of pepperoni over the cheese.

On another note, my wife got me a pizza stone, the question is that there seems to be about an even number of yes, use parchment paper, no, do not use parchment paper. What are the thoughts of KS peeps?

Was it Pendeli's? They're the only ones I know of who cut their pepperoni in long strips instead of rounds and cover the entire pizza with it before baking.

If there's another one I'd be curious :)
 
It was a road trip, up to the land of the drinking when 18 and strip clubs, just the trip for a group of 18 year olds about to go into college. :laughing
 
Super normal for us to see under 21 year olds getting cheap hotel rooms for the drinking, strippers, casino, and today I assume, legal weed.

Despite living here for 16 years I still prefer East Coast style food. Missing my bagels, and deli stuff.
 
Yup! Made using the Instant Pot.

I never realized the importance of soaking cut/peeled potatoes in cold water. But doing this really helped them keep the shape.

One thing i do different from the recipe is I really cook down the onions to the point where you think they are burnt. Then layer in the rest of the stuff and pressure cook it.
 
If you boil potatoes for 10 min in water with a little vinegar in them they will maintain their form...similar effect to poached eggs.
