As usual, Jordan's food looks great!

My ribs turned out great, I went with the brown sugar, butter and honey glaze on the last 321 phase.

I really don't like beef ribs, tried them a couple times but didn't feel like they were worth the effort. However, I do like flanken style beef ribs cooked at 220 for 2 hours with good seasoning on them.
 
I cooked them wrapped with a rub for 3 hours and they were still tough so I put them back in for 2 more and they were perfect. STayed on the bone but tender.

I held the ribs and let the dogs rip off small pieces of meat I know it's bad to give dogs actual bones.
 
I've heard a lot of things regarding dogs and bones over the years, rule of thumb back about 4 decades ago was no chicken bones but beef bones were fine and actually beneficial.

Not sure where the current perspective is.

I stumbled across this website last night. There are some fantastic stories along with the recipes. I was into sourdough some years ago, having made my own starter, and think I will dive back in with this one.

So finally mixed the dough yesterday and baked one today after a 24 hour proof in the fridge. Seemed to bake a little flatter, and I definitely need to flour the bottom of the next one as it was pretty wet and I had a hell of a time getting it off the pan it usually just releases...anyway tastes f'ing amazing, maybe a little better than my usual. Next time I'll add 10-20% rye flour itself and maybe some caraway seeds.



 
Got my home made frozen fries recipe pretty much down. Yukon Gold, sliced into fries. Soaked 30 min in cold water, then boiled 10 min in vinegar water. Dry. Air fry @ 335 for 20-22 min and then rest (do other batch), and then finish @ 400 for 7-10 min until desired crispyness. Spray with pam between batches on the fries. Shake half way between each fry.

Left first fry, right second fry



Gonna freeze the rest.
 
it's about that time to break out the ooni again. I'm just waiting on the rain to go away.
