Bullitt Car Chase Scene

If that was real life, the guy in the blue GTO would have joined in on the fun for sure:teeth
 
Definitely a classic, helped define what a modern urban car chase should look like. French Connection also has some great ones.

But my favorite ones are from the first 2 Mad Max movies. Those are some spectacular action scenes, done on fairly low budgets (of course, you have to deal with the fairly ridiculous biker stereotypes).
