Hi Barf,

Looking for a farm that butchers their own meat. Looking for cow, goat and/or chicken. I need them to butcher their own stuff because the ones that send their animals to a slaughter house follow certain usda/fda guidelines and wont sell me certain offal. Looking for recommendations. Thanks
 
As of a couple years ago, all licensed meat sellers have to use USDA approved butchers. Mobile guys who might work with you got hosed.

DeLa Ranch in Lake Elsinore Ca. has your offal. That's our supplier and they ship anywhere. Hold on to your wallet.

The stuff I can't seem to get my hands on is unprocessed tripe, otherwise known as "green tripe". Its not fit for human consumption cause it still contains all the natural bacteria and such. The tripe you can get at the store has already been cooked through and bleached. Its for my dogs.

I looked for that also, hard to find. Maybe try Ranch 99.

The guys behind the counter had no idea what I wanted. Their meat selection is actually pretty weak compared to a lot of the butchers I've been to. There is one place in gilroy that sells green tripe but id prefer to not have to mail order and pay a premium for something most places discard. It would also be convenient to buy all my meat from one place.
 
Yeah I hear you. They do sell it frozen at Petco, but it's not cheap. Maybe also try SFRaw. Let me know if you find some.

find someone that hunts. wherever they send their animals might be willing to work with you, or said hunter might be willing to save those innards for you.
 
When I was a kid, and it's been awhile, my folks had friends who lived on the northern boarder of Salinas near Prunedale. They had three kids, who were all heavily involved in the local 4H chapter, and had a sizable chunk of land. 4H projects included raising livestock that were auctioned off once mature. My folks funded raising a few extra sheep and pigs. Then, one Saturday we'd show up, slaughter the beast, butcher and package it. Once I was a teen, I'd participate. It was quite an eye opener.

Anyway, you might consider doing a google search for 4H club chapters and contacts in Santa Cruz, Corralitos, Watsonville, Salinas, Aromas, Prundale, Hollister, and Gilroy; and see if you can hook up with a family who might doing be doing something similar.
 
What about Belcampo Meats? Not sure if they'll give you want you want. :dunno
 
Assuming you're not talking about pig, look for a halal abattoir, they are usually smaller. If you can't find on Google ask a halal meat market where they get it.

I talked to a few halal markets in my area. They are all under the same rules as the other butchers. tripe has to be processed in order to go through a retail store.

AND they are out of Hollister - so you may be able to get around packaging & shipping costs

ya I emailed them regarding some bulk pricing. There is Hollistic Hound in Berkeley that carries their product. a 5lb roll of just tripe is 13.50. Waiting to hear back from the greentripe.com to see if a bulk discount + shipping will come out cheaper.

At this point that looks like the easiest option. Unless I join some hippy BS co-op in SF that requires me to volunteer 8 hrs before I can order...
