MMMMmmmm Pizza...

If you're at all interested in making your own pizza and saving yourself years of trial and error:

Dough:http://www.seriouseats.com/recipes/2010/10/new-york-style-pizza.html
Sauce:http://www.seriouseats.com/recipes/2010/10/new-york-style-pizza-sauce.html

You need a stand mixer but ideally a food processor, a wooden pizza peel (paddle), and a pizza stone...I prefer a pizza "steel" though...I've broken like 4-5 stones in 7 years and my steel is both indestructible AND better at holding heat.

And that's it. I pre-heat to 550 for 1 hour and then switch to broil for the bake. Takes under 4 minutes.

That's the recipe I'm following.. no go. Either I am doing something wrong or it's no bueno.

Too elastic which makes it too thick.

I dont care what kind of pizza you are into- if you don't think zachary's is delish, you were issued faulty taste buds or have been eating too much ass or something. That chunky, herby fresh marinara alone is worth the price of the pie.

Patchis is better Chicago than Zachary's, better atmosphere and bar too

whoa, finally someone said it (and repeated it after HH said it first.)
Therefore I suppose I don't have to make a trip all the way to the East Bay just for a Zachary's, since there are two Patchix's in The CITY.

I prefer : Patchis for deep dish ... and Little Star in the City (as said above) for other.

Wally: "Gialina" in Glen Park (and its twin on Divis) are good/ok but maybe overhyped..after I've tried them I prefer the above.

finally.. if you want the *least* hyped but with decent quality, I think that's a small secret: Pauline's on Valencia

And that's it. I pre-heat to 550 for 1 hour and then switch to broil for the bake. Takes under 4 minutes.

So you preheat the dough??? a whole hour??? Or you take 1 hr just to warm up the oven.

I was super excited to try this after my friend's buildup.

Anti-climactic. It was terrible. Tasted like a thick slice of tomato pie. Bland. I personally don't like chicago pizza that much as a concept but I've had way better in SF.

(naturally this is just my opinion, not a statement of fact against Zacharies).

Interesting. The one I had was awesome, but only the next day as leftovers. It was lacking at the restaurant imo.

Where is Patchis? Need to try this place now.

Irving was decent.

You should try their deep dish... :) What say you and I go meet there for dinner when I get back from my trip? We can talk about your other project too...

I did try their deep dish, but yeah let's go back

Mother fucking THANK YOU! Someone with sense.

This, is New Haven Pizza.

Unlike you, I am most profoundly NOT a right coast guy. However, New Haven pizza in general, and Frank Pepe's in particular was a life changing experience. Last spring I was in New Haven the first time in years, and the very first thing I did upon hitting town was to go get a slice. It was heavenly. :drool

Right coast bias is not nessecary to enjoy Pepe's. I haven't been home in over 2 years, I'll mostly be going back for the pie.

Thank you. Will be trying one of these in the next week or so.

New Haven is in fact "so" famous for their pizza. Read the links. No sure where your amazingly off base college kid comment is coming from.

I'm not denying I'm bias to right coast pizza. But fact is, many many people recognize New Haven having some of the best pizza.

I'm sure its great and amazingly, I'm sure Yale students love it. I'd like to try the white clam pie mentioned at the website.

It is surprising to hear the usual Chicago-New York rivarly eclipsed by New Haven, I guess that's what I'm saying; and, people have different expectations of what makes pizza great, to wit, the rivalry between Chicago and New York. Try and convince either that they don't have the very BEST.

Since this started with Sactown pie, everyone who likes true Neopolitan should try Masullo's on Riverside. Dude had the oven shipped over from Naples.
