come on dude - when you move to a place, you take advantage of what’s local, and for anything else, you roll your own. made chile verde enchiladas for dinner tonight. everything from the local mountain grocer (rotisserie chicken, handmade tortillas, chiles, mexican crema and oaxaca cheese). totally killer if i do say so myself.

Yeah obviously BBQ is god here. You have to immerse yourself in it. Well biscuits and gravy too a bit...but that's just breakfast.

Have you acquired a taste for country ham yet? I grew up on it. Most people find it overwhelming. I call it “American prosciutto”.

One of the things I absolutely crave.

I loved country ham over 20 years ago...thanks to Uncle Sam.

I’m glad I don’t have access to it. I eat it for breakfast, a mid-meal snack of ham biscuit, a piece for lunch if any is left. Leave it on the counter. Flies don’t want it and bacteria avoid it.
