The Official French Macaron Thread

Macaron's are bomb, but it really depends where you get them from.

Masse's Pastries in the Gourmet Ghetto in Berkeley makes some pretty good ones, but you need to go get them early otherwise you'll be short on selection.
 
Bouchon Bakery makes some killer macarons too; pricey but delicious.

Was also recently told about a sriacha macaron. I need to find out where and track it down
 
My wife's handiwork!

She's a home baker who has the skills, if I do say so myself, of some of the better bakeries and patisseries I've been to. She had done them once before at home, then I got her a four-hour class last Christmas at the French Culinary Institute in Campbell where she practiced again. Then she came home and did a third batch almost immediately to practice her skills and these were the result (older picture here). She did passionfruit, meyer lemon, salted caramel, and coffee varieties in that particular round, so lots of variety!

For those interested, she said the class was a bit elementary for an experienced baker but overall was interesting and fun.

I can't really answer your question satisfactorily, but I know there was a decent amount of know-how/practice involved in terms of piping them out and cooking them so that you get the bubbly underside and smooth topside of each cookie half. Sometimes we'll pay but she can make them so well that we mostly enjoy them that way. I'll tell you though, they ARE a lot of work, so the prices they command are not that surprising.

Yep. Mrs. boney makes 'em too. Not quite as sterile looking as the one's you buy in the shop, but every bit as tasty.

damn things are like mini cheeseburgers of goodness! (probably have the same calories as a cheeseburger)

had the mango, the coffee, and the chocolate. super tasty!

We bought them from Chantal Guillon in Hayes valley, SF. I like the taste and love the texture. Expensive though.
