I find that i get better results when I let the eggs come to room temp.
 
do you put it in an ice bath right after?
I think i stop at 3m because i don't ice bath it.

so the 40 hour dough rise didn't taste any better or more sour than 20 hour but it's good to know it can be held that long for baking timing purposes.

Conclusion: I prefer oven baked over a pizza stone at lower temp :)
 
Interesting take on ooni vs oven.

I need to get one of those wood pizza shovels. (name eludes me right now). The metal one likes to stick to the dough no matter how much flour/cornmeal i put.
 
It's called a Peel.

I needed to electric saw mine down to fit the 14" gap...I then use a round metal one on a stick to lift and turn every 20-30 seconds
 
I use the Pizza app. You put in your dough weight and how long you want it to rise and it spits out a dynamic recipe.

As noted, the hot and fast pizza style makes for very soft crust so be aware you may not prefer it though I recommend trying.

If you want to pick it up I have a Pizza kettle attachment for the weber somewhere you can have for free.
 
I still use the old recipe that HH gave me a long time ago. It's perfect it makes a dough ball that I separate into quarters and use 3 of those as single server pizzas and then I cut the last quarter into 2 and its the perfect size for a calzone and a smaller pizza for the wife. I swear the kids want pizza every other week now. matter of fact we just did it in the over Saturday.
 
restocking the stock supply. Stewing hen, 2 turkey wings cut up, 1 turkey neck cut up, mirepoix, duck bones I saved. Roasted and now pressure cooking.





Came out pretty rich looking can't wait to eat it.

This one I'm pretty proud of, it's Banana chocolate chip walnut bread but instead of the usual options for the dairy (yogurt, sour cream, or buttermilk), I used ricotta cheese and it was fucking amazing.

 
How long does the stock last for? I've always wanted to try it.

That Banana Choco Chip looks bomb.
