Vegetarian Food Thread

A couple of things.

1. Yes. The kits work well if you follow the directions. You won't get a ton, but it's fun and they are good.

2. It might be winding down and this wind doesn't help. But the lions mane mushroom grows wild around here and is plentiful in the bay, especially south bay right now. It's been a fantastic year for that mushroom. Look on oak trees.

3. They are great. Simple saute with butter or oil, some garlic etc.

Ducati-Hubby and I have been trying to eat more veggie entrees as well. I'm struggling a bit, not having grown up in a household that was big on vegetables, let alone vegetarianism. I do meal kits, and it's been a great way to have someone else guide me on cooking without meat. One of the added benefits is cleaning! I don't need to worry about pathogens in my kitchen the same way I do with meat. And there isn't the same kind of smells/mess. I don't need to keep the utensils separate. I'm still careful about washing spinach and 'shrooms because of the salmonella, but overall it's been really nice going this route!

I suspect obesity amongst vegetarians is a rarity.
I’d say give it a shot for anyone trying to lose weight.

Looks killer. We've been using cauliflower for all sorts of stuff lately. Like Tofu it's has so many different uses.

Agree 100%, and on too many occasions I am the latter of the two types of vegetarians :laughing

Like today's lunch... "Sambar Vada", google it if you don't know. Looks kinda gross, but those carbs are very satisfying :teeth

I’m in!

This is what I made my carnivorous relatives. They left happy.

The key is: use less heat. Cook longer. It’s not done ‘til it’s burnt.

I really love getting some Vietnamese style rice papers and soaking briefly and then rolling in mint, carrots, cucumber, etc and then dipping in peanut sauce. Very satisfying.

We went to a favorite local place for just this nosh and they said sorry, no rice paper it’s stuck off shore on a container ship. Total kick in the dick.

When Mrs. strong-armed me into trying out for season one of Masterchef I decided on fresh spring rolls as my demo dish. Made many 10s of them over a few days. Trick little food item to prepare. I received praise but ignored the call back once I realized I would have couch surf in LA to participate in taping and give up my real job. No thanks, but the spring roll training was worth the effort.

Also take any recipe like lasagna and replace the meat with Impossible burger which you can find everywhere nowadays. Don't be afraid, I have tried it and its amazing. I really don't like most meatless burger substitutes.
 
I threw down some vegan banana bread and some vegan coffee cake yesterday. YUM.

I made kid a pot of pasta the other day that he declared to be delicious.

While I admit that the Impossible product tastes great, it tastes nothing like meat to me. It tastes like mushrooms. I have no beef (tee-hee) with mushrooms--they're delicious.

I'm not quite sure I understand the whole meat substitute thing. The point is not to eat meat, because it's better for me, better for the environment, and I'm not killing something, so I feel like I'm screwing with my own head eating substitutes. That's just me. I just had two pieces of bacon this morning and they were divine. So I got my fix. :teeth
 
I hear you and I agree to a point. Ask a meat eater, they will tell you it does not really taste like meat. However have someone that hasn't eaten meat in years\decades and some may tell you they got nauseous because it tasted too much like meat. My wife enjoys beyond, but have her eat an impossible burger and she can get a tummy upset. However that may also be all in her head.
 
I've noticed a bit more of a "bubbly tummy" since I've started eating a lot more veggies. Thankfully it happens in the evening most of the time and not at work. Not sure what to do about that. I think it's the beans, but pile on some broccoli, a bunch of curry and a dash of spice, and lordy... I become a weapon of mass destruction. I honestly was worried that the cat crawling under the covers during a particularly gassy night was going to be dangerous for her. :laughing
 
^ Your gut biome is changing. I noticed that when I began eating oatmeal every day. For me it settled down quite a bit after a few weeks.
