Whee!
Seems like everyone has their own definition of this word, yet we all use it to describe "going real fast".

Is it redline in any gear? Wide open throttle? Maximum speed the bike can go?

What does it physically mean? Where is the "pin"? :ride

Pinned?

nope. pined.

To suffer a mental and physical decline, especially because of a broken heart.
"I'm pining to ride my poor bike again."

"she thinks I am pining away from love"

lol - pῑned I see what you did there.

When the tach needle or speedo needle are all the way to the max number on the dial and it is against the 'pin' that prevents it from swinging off the dial, that's what 'pinned' means.

(I didn't Google that)

When I think pinned I think bouncing off rev limiter last gear

I always took it to mean WFO, and hold it there. Any gear.

Being on the rev limiter isn't fast, and there's very few situations where you're going to be WFO in top gear for long periods of time.

Pinned.
Floored.
Wide (Fuckin) Open.
To the stop.
Stretch the cable.
Foot to the floor.
Pedal to the Metal.
etc.

back in the day, speedos and tachometers had a physical dial and and a pointing needle, and at the upper end of the range is a small pin, to limit the mechanism.

"Pinned" may refer to the speedo needle pushed to the stops, it cant go no higher
