Things I notice off the bat: his anchor point is much lower. Mine just moved forward to my lip, his is down on his chin. This makes the string press into his mouth/nose. Mine just barely touched my nose. His bow hand thumb isn't wrapping around the bow like mine.
The arrows did noticeably move less if I opened my hand like that, but still danced a little.
My input - if you just 'let go', you'll always get the lateral dance, and it'll be pretty unpredictable, making tight groupings impossible.
Might be worth WATCHING the pros - they don't 'let go', they draw their hand back while letting the string slip off their finger tips.
It used to help me to think of, you're not letting the string out of your fingers, you're moving your hand back until your chin holds it laterally while continuing to draw back.
Your hand shouldn't be bouncing back because of the sudden release of tension, you're actually pulling it back and forcing the string to stay steady on your chin.
Can't research vids at work, but take a close look at the recent Olympics footage.
