I've been experimenting with the air fryer in an attempt to duplicate kick ass recipes I know work but need a deep fryer and I think I just perfected the method for wings.

Dry wings very well, and toss with equal parts salt and baking powder



Dry overnight in fridge, I like to flip them half way

First fry at 350 for 20 min


Second fry 400 for 12 min



Sauce etc



Delicious
 
Then I shouldn't post the Castelvetrano olive sourdough I made that was entirely consumed between 8 people with baked brie as an appetizer.

So I HIGHLY recommend this recipe and it may have basically broken cooking for me mentally on some level because of how easy it is.

Baby back ribs, BBQ rub of your choice, BBQ sauce optional (I did not use). 30 min at 350 in the air fryer, and literally done. Super good.



 
Went to my friend's for pizza night. I pretty much have it mastered at this point, this particular style. It's light, the crust has flavor, the natural sweetness of the tomatoes can be tasted, and I use quality ingredients.









Two of my friends are Indian and we kept putting different hot sauces on the pizza and I think I woke up crying.

Bought a bunch of Yukon gold, ran them through the fry slicer, soaked in coled water, boiled in vinegar water for 10 min, fried once for 50 seconds.




They make the best instant fries. Just got a new deep fryer with integrated oil drain/filter which makes things so much cleaner plus it's a beast :)

HHM, are you a buttermilk adherent? I did the NYT turkey recipe this year and it was well-received. Then I put some young chicken in salted buttermilk before bbq and the results were wow.

Now you have me thinking about baking one and frying one. They are local 3lb pastured birds so a pricey treat, but worth iit imo.
 
I will remind myself this Sunday to not tear into my daughters king cake before I take some pics to post on here. She started making them and selling them via word of mouth to help her defray college costs. Keep an eye out for some pics this weekend.
