I love this bowl, I'm gonna try to recreate it this weekend.cold noodles. i am completely addicted to them. boiled egg, some cabbage kimchi, tofu, and that’s beefless bulgogi i bought at trader joe’s. not bad. is actually better reheated. the cucumbers were thrown in a jar with sesame oil and rice vinegar for 30 minutes which gives a nice flavor View attachment 564652

They are tasty but I treat it just like a red meat burger: They are a "Once in a great while" food because they're so frickin' heavily processed.

I did! And they were amazing, so thank you for the tip. I did exactly the same pairing with the kimchi, marinated cucumbers, the boiled egg and the Trader Joes veggie bulgogi. you have no idea how stoked i am that you enjoyed it this much. i went to the market here yesterday and i bought more of this version that has dried noodles and a sauce packet. it’s good and each pack has four portions so it sounds like it’s enough for the whole fam. i found that market also has house made kimchi. it was so full of flavor i ate like a quarter pound of it just grazing.I did! i served it in a bed of cottage cheese. you know the traditional way.Even without gravy and cheese curds??
